Making of Ciaffagnone

The Festival of the Ciaffagnone is celebrated every year at the beginning of June in San Casciano, a short walk from the centre of the hamlet.

The hero of this gastronomic meeting is the Ciaffagnone, a kind of pancake, which pays homage to the traditional cuisine and typical flavours of the territory. The Ciaffagnone was a typical Carnival food, eaten first in houses and then in the square on Shrove Tuesday, accompanied by a good glass of Chianti, the music of the Band and the scattering of confetti, after being cooked in pig lard in long - handled frying pans on improvised braziers.

This exquisite dish must also have its choreography. The difficulty of its success, apart from the quality and the correct quantity of the ingredients, lies in the skill of the ciaffognanaio (maker of the ciaffagnone) in tossing the pancake in the air and catching it so as to fry it on both sides. Once it is golden and soft, it is best served with local pecorino cheese, or these days with sugar or Nutella.
